The ‘Chef of the Year’ award at the 11th Hotelier India Awards 2019 in luxury to upper upscale category went to Chef Anuraag Narsingani from JW Marriott Pune. Here, is a short excerpt where we get to know a bit more about to Chef Anuraag as he shares his thoughts on Hotelier India.

This is my first award from Hotelier India and knowing the jury that has honoured me with this award makes it a very special one. It is a testament to how the gastronomic scene in India is exploding; Indian chefs are winning the hearts and minds of food lovers everywhere.

One of the biggest factors for my win is the teamwork between my team and me. I’m only the captain who leads, but sometimes there are young chefs with good ideas, who have a desire to excel. It is their vitality, their energy that ensures the food and beverages at JW Marriott Pune truly come alive.

Receiving the Chef of the Year recognition on such a prestigious national platform motivates me to constantly keep innovating.

I want to keep pushing the envelope by introducing global trends. I would like to create eclectic dishes for my guests, with a dash of my own magic and twist. Memory, history, thought process, modernism and nostalgia act as my big inspirations when it comes to cooking.

Travelling around the world with the desire to explore new techniques and flavours that I can further innovate for my guests is what drives me every day.

My biggest support has been my wife Komal Narsingani, who has stood by me in trying times.

My outlook towards cooking is very simple, food that is served needs to be flavourful and authentic. We have to appreciate the science of food; never compromise on the raw ingredients as that truly elevates the final cooking experience.
