The Leela Palaces partner with Chef Prateek Sadhu and Conosh for an exclusive four-city culinary tour

From Peaks to Plates by Chef Prateek Sadhu is set to bring the rustic flavours of the Himalayas to Jaipur, New Delhi, Bengaluru, and Chennai

The Leela Palaces, Hotels, and Resorts collaborates with the illustrious Chef Prateek Sadhu in partnership with Conosh. The soul of Chef Sadhu’s renowned restaurant, NAAR, will be brought to life across four iconic Leela palaces in Jaipur, New Delhi, Bengaluru, and Chennai through this exclusive partnership.

NAAR, meaning ‘fire’ in Kashmiri, encapsulates the essence of Chef Sadhu’s culinary philosophy, which pays homage to the inner flame that fuels his passion for crafting an elegant dining experience in a secluded Himalayan village. The cuisine emphasises a wood-fired, grill-centric approach, embodying the rich, elemental flavours of the region.

This collaboration exemplifies The Leela’s dedication to Indian Exceptionalism, celebrating the nation’s rich art, culture, design, architecture, and culinary heritage. In line with this legacy, Chef Sadhu has crafted an exclusive menu that brings Himalayan cuisine to life. Guests will embark on a culinary journey, savouring the subtle smokiness of signature dishes like Akasalu and the warmth of charcoal-grilled skewers. Each bite, from the pairing of seasonal fruits with fermented grains to desserts blending the rustic sweetness of ragi with sea buckthorn’s tang, captures the essence of the Himalayas.

Chef Prateek Sadhu shares his thoughts on this collaboration: “The Himalayas have long been a profound source of inspiration for me, not just for their awe-inspiring landscapes but for the rich flavours and deep-rooted traditions of the region. Collaborating with The Leela to introduce NAAR’s essence to these four cities is an opportunity to share the heart and soul of Himalayan cuisine with a discerning epicurean audience. This partnership allows guests at The Leela to experience a journey through time, tasting traditions steeped in history while indulging in the finest codes of modern luxury hospitality. Each dish is crafted to capture the spirit of the land, ensuring an unforgettable culinary experience that resonates with the essence of the Himalayas.”
